This one is so simple, that it's a great recipe to teach your daughter measuring and mixing. It makes for some really fun mother/daughter kitchen time.
Lemon Moon Cookies
1 box lemon cake mix
2 cups Cool Whip topping
1 egg, beaten
2 T. lemon juice
Mix all of the above ingredients together. The mixture will be like a sticky pizza dough though not stretchy. Take a teaspoon full of batter and drop it into a bowl of confectioners sugar. Then, put the sugar dipped drop onto an ungreased cookie sheet. Cook at 350 for 11 minutes. Let cool before letting them melt in your mouth!
