Lemon Moon Cookies

Looking for the perfect summer cookie? Light. Airy. Lemony and so sweet even kids love 'em. Look no further than our Lemon Moon Cookies.

This one is so simple, that it's a great recipe to teach your daughter measuring and mixing. It makes for some really fun mother/daughter kitchen time.


Lemon Moon Cookies

1 box lemon cake mix

2 cups Cool Whip topping

1 egg, beaten

2 T. lemon juice

Mix all of the above ingredients together. The mixture will be like a sticky pizza dough though not stretchy. Take a teaspoon full of batter and drop it into a bowl of confectioners sugar. Then, put the sugar dipped drop onto an ungreased cookie sheet. Cook at 350 for 11 minutes. Let cool before letting them melt in your mouth!
